ANTI-OXIDANT POWER BALLS

INGREDIENTS

1/3 CUP WALNUTS, CRUSHED

2 TBS COCONUT OIL

¼ CUP SUNFLOWER SEEDS

1 TBS RICE MALT SYRUP

¼ CUP FLAKED ALMONDS

2 TSP RAW CACAO POWDER

¼ CUP ALMOND MEAL

½ CUP SHREDDED COCONUT

¼ CUP GOJI BERRIES

METHOD

• COMBINE COCONUT OIL AND RICE MALT SYRUP IN A MEDIUM MIXING BOWL (MELT OIL IF IT IS SOLID)

• PROCESS WALNUTS, SUNFLOWER SEEDS & FLAKED ALMONDS UNTIL THEY BECOME SMALL PIECES

• ADD THE PROCESSED MIX AND REMAINING DRY INGREDIENTS (EXCEPT THE COCONUT) IN TO BOWL WITH THE OIL AND SYRUP, STIR UNTIL THOROUGHLY COATED

• ROLL HEAPED TEASPOONS OF MIX INTO BALLS AND ROLL IN  COCONUT

• PLACE BALLS ON A TRAY LINED WITH BAKING PAPER AND FREEZE FOR  15 MINUTES
