2 TBS CHIA SEEDS

1/2 CUP GOJI BERRIES

RAW CACAO POWDER

1 CUP BOILING WATER

1 2/3 CUP SHREDDED COCONUT

1 CUP CASHEWS

 

METHOD

• COVER DATES AND GOJI’S WITH THE BOILING WATER AND SOAK FOR 30MINS

• TIP DATES AND GOJI’S INTO YOUR PROCESSOR BOWL, ALONG WITH THE WATER, AND PROCESS UNTIL SMOOTH

• ADD IN THE CASHEWS AND CHIA SEEDS, PROCESS UNTIL CASHEWS HAVE BROKEN DOWN

• ADD CACAO AND PROCESS UNTIL COMPLETELY MIXED THROUGH, THEN GRADUALLY ADD COCONUT UNTIL MIXED THROUGH

• LINE A SQUARE CAKE TIN WITH CLING WRAP, POUR MIXTURE IN AND SPREAD OUT EVENLY.  COVER WITH CLING WRAP AND REFRIGERATE ATLEAST 2 HOURS. REMOVE AND SLICE

• STORE IN AN AIRTIGHT CONTAINER IN THE FRIDGE OR FREEZER

******* COULD ROLL INTO BALLS INSTEAD OF MAKING A SLICE.  COULD ADD CASHEWS IN WHEN ADDING COCONUT FOR A CRUNCHY TEXTURE
