3 TBS CASHEW BUTTER
3/4 TSP PEPPERMINT EXTRACT
3 TBS OF THE SOAKING DATE WATER
3/4 CUP HEMP POWDER
3/4 CUP ROLLED OATS
3 TBS RAW CACAO POWDER
METHOD
• POP DATES INTO A BOWL AND COVER THEM WITH BOILING WATER AND LET SIT FOR AT LEAST 15 MINUTES TO SOFTEN
• PROCESS OATS UNTIL A CHUNKY MEAL FORMS, PULSE IN REMAINING DRY INGREDIENTS AND THEN SET ASIDE
• DRAIN DATES BUT KEEP 3 TBS OF THE WATER, THEN PROCESS DATES WITH WATER, CASHEW BUTTER AND EXTRACT UNTIL A CHUNKY PASTE FORMS
• PULSE IN DRY INGREDIENTS UNTIL MIX FORMS A DOUGH
• ROLL TABLESPOONS OF MIXTURE INTO BALLS AND STORE IN THE FRIDGE OR FREEZER
* YOU COULD SWAP THE MINT FOR ORANGE ZEST/EXTRACT, OR COFFEE, USE TAHINI OR A SEED BUTTER INSTEAD OF CASHEW BUTTER TO MAKE NUT FREE – MAY NEED TO ADJUST EXTRACT/CACAO AMOUNTS THOUGH
* IF YOU PREFER THEM MORE FIRM, ADD ANOTHER ½ CUP OF OATS OR ½ CUP NUTS
* YOU COULD PRESS INTO A LINED PAN AND SLICE INSTEAD OF MAKING BALLS
