COCONUT APRICOT CHIA BARS

INGREDIENTS

1/12 CUP TURKISH APRICOTS

1 CUP ALMONDS

3 TBS NUT BUTTER**

1/3 CUP MACADAMIAS

3 TBS RICE MALT SYRUP***

1 CUP DESICCATED COCONUT

1 TBS COCONUT OIL

1 CUP OATS

3 TBS ALMOND MILK

1 TBS CHIA SEEDS

METHOD

• PROCESS APRICOTS, NUT BUTTER, SYRUP, COCONUT OIL, AND MILK UNTIL A STICKY PASTE FORMS

• ADD COCONUT AND PULSE UNTIL COMBINED.  ADD NUTS AND PROCESS UNTIL BROKEN INTO SMALL PIECES.  ADD OATS UNTIL MIXED THROUGH ( YOU MAY NEED TO DIVIDE MIXTURE BY TWO BEFORE ADDING OATS, DEPENDING ON THE SIZE OF YOU R PROCESSOR.  MIXTURE SHOULD BE COOKIE DOUGH CONSISTENCY

• PRESS MIXTURE INTO A CAKE TIN LINED WITH CLING WRAP.  I USED A PIECE OF CLING WRAP TO PRESS MIXTURE IN AND LEVEL OUT.  SPRINKLE CHIA SEEDS OVER THE TOP, AND PRESS INTO MIXTURE SO THEY DON’T FALL OFF

• PLACE INTO THE FRIDGE FOR AN HOUR OR TWO BEFORE SLICING! 

* BEST EATEN STRAIGHT FROM THE FRIDGE, GOES A LIL MUSHY IF LEFT AT ROOM TEMP FOR TOO LONG!

** I USED MAYVERS SUPER SPREAD NUT BUTTER (NATURAL INGREDIENTS, NO ADDED OIL/UGLY INGREDIENTS)

*** YOU COULD USE HONEY OR MAPLE SYRUP OR OMIT SWEETENER & INCREASE OTHER LIQUID INGREDIENTS TO COMPENSATE
