RAW PASSIONFRUIT CHEESECAKE

INGREDIENTS

BASE

5 TBS CASHEW MEAL

2 TBS COCONUT FLOUR

2 TBS DESICCATED COCONUT

2 & ½ TBS COCONUT OIL, MELTED

PINCH OF SALT

FILLING

1 CUP RAW CASHEWS, SOAKED

1/3 CUP COCONUT OIL, MELTED/COOLED

2/3 CUP COCONUT MILK

2  MEDJOOL/FRESH DATES, SOAKED 15MINS JUICE FROM ½ LEMON

METHOD

• COVER CASHEWS WITH COOL WATER AND LEAVE TO SOAK OVERNIGHT(8-12 HOURS)

• MIX BASE INGREDIENTS IN A MEDIUM BOWL UNTIL A CRUMBLY MEAL FORMS, PRESS INTO A LINED LOAF TIN (I USED A SILICON PAN)

• PULSE PASSIONFRUIT IN YOUR BLENDER OR PROCESSOR TO FORM A SYRUP, SET ASIDE IN SMALL BOWL/CUP

• BLEND/PROCESS FILLING INGREDIENTS, EXCLUDING PASSIONFRUIT, UNTIL SMOOTH (YOU MAY NEED TO STOP AND SCRAPE DOWN THE SIDES A FEW TIMES)

• ADD IN MOST OF THE PASSIONFRUIT (KEEP 1-1& ½ TBS TO SWIRL OVER THE TOP, OR ADD IT ALL IN TO THE FILLING, WHICHEVER YOU PREFER) AND PROCESS UNTIL MIXED THROUGH EVENLY

• SPREAD THE BASE, IF ADDING PASSIONFRUIT SWIRL, DROP SPOONFULS OVER FILLING AND SWIRL WITH A BUTTER KNIFE, THEN POP INTO THE FREEZER. ONCE FIRM, REMOVE FROM PAN AND SLICE J STORE IN THE FRIDGE OR FREEZER

NOTES

- SOAKING THE CASHEWS AND DATES ARE IMPORTANT SO THAT YOU CAN BLEND THEM AS SMOOTH AS POSSIBLE. IF YOU ARE TIME POOR, YOU CAN POP THEM IN A BOWL AND COVER THEM WITH BOILING WATER AND ALLOW TO QUICK SOAK FOR 90MINS
