2/3 CUP ALMOND MEAL

1 CUP RAW CASHEWS

1/8 CUP COCONUT OIL

1/3 CUP COCONUT FLOUR

1 CUP PITTED DATES

1/8 PURE MAPLE SYRUP

3 TBS COCONUT OIL

1/3 CUP PURE MAPLE SYRUP

2 TBS RAW CACAO POWDER

2 TBS PURE MAPLE SYRUP

1/4 CUP COCONUT OIL

1 TBS CAROB POWDER

1 TBS TAHINI

1 TBS TAHINI

1 TBS TAHINI

2/3 WATER

2/3 CUPS PEANUTS, CHOPPED

METHOD

• LEAVE CASHEWS & DATES (FOR CARAMEL) TO SOAK IN HOT WATER FOR 1 HOUR

• MIX BASE INGREDIENTS UNTIL COMBINED AND PRESS INTO A LINED SQUARE CAKE TIN

• PROCESS CARAMEL INGREDIENTS (EXCLUDING PEANUTS) IN A FOOD PROCESSOR UNTIL A SMOOTH SAUCE FORMS (YOU WILL NEED TO STOP AND SCRAPE DOWN THE SIDES A FEW TIMES, MAY TAKE UP TO 10 MINUTES TO GET A SMOOTH CONSISTENCY, DEPENDING ON PROCESSOR)

• POUR OVER BASE INGREDIENTS, SPRINKLE OVER PEANUTS AND FREEZE UNTIL CARAMEL IS SET

• MELT COCONUT OIL AND COMBINE WITH OTHER INGREDIENTS, MIX UNTIL SMOOTH

• POUR OVER FROZEN SLICE AND SPREAD EVENLY. RETURN TO FREEZER AND SLICE ONCE SET.  STORE IN FREEZER

* BEST EATEN WHEN JUST DEFROSTED, GOES MUSHY AT ROOM TEMP OR IN FRIDGE!
