WALNUT MOCHA FUDGE

INGREDIENTS

1 3/4 CUPS DATES

1 CUP WALNUTS

2 TSP COFFEE

1 TBS CHIA SEEDS

3 TBS RAW CACAO POWDER

2 TBS COCONUT OIL

3 TBS PURE MAPLE SYRUP

1 CUP ALMOND MEAL

1/2 CUP CRUMBLED WALNUTS

METHOD

• SOAK DATES AND WALNUTS IN HOT WATER FOR 30MINS

• DISSOLVE COFFEE IN 1/3 CUP BOILING WATER AND SET ASIDE

• DRAIN DATES/WALNUTS AND PROCESS WITH OIL AND SYRUP UNTIL A CHUNKY PASTE FORMS

• POUR IN COFFEE, CHIA AND CACAO AND BLITZ UNTIL COMBINED

• GRADUALLY ADD ALMOND MEAL UNTIL COMPLETELY MIXED

• LINE A SQUARE CAKE TIN WITH CLING WRAP, POUR MIXTURE IN AND SPREAD OUT UNTIL EVEN

• SPRINKLE CRUMBLED WALNUTS OVER AND PRESS INTO MIX SLIGHTLY

• COVER WITH CLING WRAP AND FREEZE FOR AT LEAST 2 HOURS. REMOVE AND SLICE

• STORE IN AN AIRTIGHT CONTAINER IN THE FREEZER
