CHOC-BANANA MUESLI BARS

INGREDIENTS

2 BANANAS, MASHED

1/4 CUP COCONUT OIL -MELTED

1/4 CUP PURE MAPLE SYRUP

2 CUPS ROLLED OATS

1/2 CUP DATES, CHOPPED

1/2 CUP WALNUTS, CHOPPED

1/2 CUP PEPITAS

1/4 CUP LINSEED

1 TSP CINNAMON

1/2 BLOCK DARK CHOCOLATE (70% OR MORE) TO DRIZZLE

METHOD

• COMBINE MASHED BANANA WITH WET INGREDIENTS IN A LARGE BOWL

• ADD REMAINING INGREDIENTS (EXCLUDING DARK CHOC) AND MIX THROUGHLY.  PRESS MIXTURE INTO A TIN LINED WITH CLING WRAP AND FREEZE 30MINS (I USED A 22cmX32cm TIN WHICH MADE 36 PIECES)

• PREHEAT OVEN TO 160 DEGREES.  LINE TWO BAKING TRAYS WITH BAKING PAPER

• REMOVE TRAY FROM FREEZER, DISCARD CLING WRAP AND SLICE INTO BARS

• PLACE ON TRAYS & BAKE FOR 20MINS, DEPENDING ON OVEN, UNTIL GOLDEN

• COOL COMPLETELY BEFORE DRIZZLING WITH MELTED CHOCOLATE

• STORE IN THE FRIDGE, (MAYBE 4 DAYS?)  I MAKE BIGGER BARS AND WRAP INDIVIDUALLY AND STORE IN THE FREEZER

* COULD SUB DATES FOR OTHER DRIED FRUIT & USE SEEDS/NUTS OF CHOICE
