COCONUT AND GOJI STOVETOP GRANOLA

INGREDIENTS 

2 CUPS ROLLED OATS*

2 TBS COCONUT OIL

1/2 CUP SLICED ALMONDS

3 TBS RICE MALT SYRUP**

1/2 CUP PEPITAS

1 TSP GROUND CINNAMON

1/4 CUP GOJI BERRIES

1/2 TSP GROUND GINGER

1/4 CUP COCONUT CHIPS

PINCH SEA SALT

METHOD

• IN A LARGE PAN OVER MEDIUM HEAT, MELT COCONUT OIL

• ADD SYRUP AND MIX TIL COMBINED, THEN ADD IN ALL REMAINING INGREDIENTS EXCEPT BERRIES AND COCONUT, ENSURING EVERYTHING IS THOROUGHLY COATED IN OIL/SYRUP MIXTURE

• COOK FOR 8-10MINS UNTIL OATS AND NUTS ARE TOASTY AND GOLDEN.  REMOVER FROM HEAT AND STIR IN BERRIES AND COCONUT

• SPREAD MIXTURE OUT OVER A LINED BAKING TRAY/OVEN TRAY AND ALLOW TO COOL COMPLETELY.  I LET MINE SIT IN THE OVEN OVERNIGHT

• ONCE COOLED AND CRUNCHY, BREAK INTO SMALL CLUSTERS AND STORE IN AN AIR TIGHT CONTAINER 

YOU COULD ADD IN OTHER NUTS/SEEDS OR DRIED FRUIT.  YOU COULD ALSO ADD IN SOME RAW CACAO TO MAKE CHOCOLATE GRANOLA…  MMM…

* IF GLUTEN INTOLERANT, YOU COULD USE QUINOA/SPELT FLAKES INSTEAD OF OATS

** HONEY/MAPLE SYRUP/ANOTHER SWEETENER COULD BE USED INSTEAD OF RICE MALT SYRUP IF PREFERRED
