WHOLEMEAL BANANA BREAD

INGREDIENTS

WET

3 MED/ LGE BANANAS

1/4 CUP COCONUT OIL (MELTED)

2 TBS RICE MALT SYRUP

2 EGGS

  

DRY

1 1/2 CUPS WHOLEMEAL FLOUR

2 TSP BAKING POWDER

1/4 CUP DESICCATED COCONUT

1 TSP CINNAMON

1/4 TSP SEA SALT

    

CRUNCHY TOPPING

1/4 CUP PEPITAS

1 TBS WALNUTS 

1 TBS COCONUT OIL (MELTED)

1 1/2 TBS COCONUT SUGAR 

  

METHOD

• PREHEAT OVEN TO 180 DEGREES.  LINE A LOAF PAN WITH BAKING PAPER

• IN A SMALL BOWL, MASH BANANAS THEN WHISK IN OTHER WET INGREDIENTS AND SET ASIDE

• COMBINE DRY INGREDIENTS IN A LARGE BOWL

• MIX WET AND DRY INGREDIENTS THOROUGHLY.  POUR INTO LOAF PAN

• PROCESS TOPPING INGREDIENTS UNTIL MIXED BUT STILL CHUNKY.  SPRINKLE EVENLY OVER MIXTURE AND PRESS DOWN VERY LIGHTLY

• BAKE FOR 45 MINS ON THE MIDDLE SHELF, OR UNTIL A WOODEN SKEWER COMES OUT CLEAN

• COOL COMPLETELY IN PAN BEFORE SLICING. STORE IN AN AIRTIGHT CONTAINER IN THE FRIDGE, I WRAP INDIVIDUALLY AND STORE IN THE FREEZER
