1 BANANA (MED TO LRG)
6 PITTED MEDJOOL DATES
1/2 CUP ALMOND MILK
1 1/2 TBS NUT BUTTER
1 TSP VANILLA EXTRACT
1 TSP APPLE CIDER VINEGAR
1 TSP BAKING POWDER
1 TSP BAKING SODA
1 TBS CACAO POWDER
1/2 CUP CAROB POWDER
2/3 CUP SPELT FLOUR
1/2 CUP CRUMBLED WALNUTS
METHOD
• PREHEAT OVEN 200 DEGREES. LINE A SQUARE CAKE TIN WITH BAKING PAPER
• PROCESS BEANS, BANANA, DATES, MILK, NUT BUTTER, VANILLA & VINEGAR UNTIL SMOOTH
• ADD IN REMAINING INGREDIENTS (EXCEPT WALNUTS) & PROCESS UNTIL COMBINED
• STIR IN HALF OF THE WALNUTS, POUR MIXTURE INTO TIN AND TOP WITH REMAINING WALNUTS
• BAKE FOR 30 MINS ON THE LOW/MIDDLE SHELF, THEN COVER WITH FOIL IF LOOKING LIKE IT MIGHT BURN, COOK FOR A FURTHER 10MINS OR UNTIL A WOODEN SKEWER COMES OUT CLEAN
• COOL COMPLETELY BEFORE SLICING
• STORE IN AN AIRTIGHT CONTAINER IN THE FRIDGE, I WRAP INDIVIDUALLY AND STORE IN THE FREEZER
