4 CUPS SHREDDED COCONUT

1/2 CUP BUCKWHEAT GROATS

1/2 CUP PEPITAS

1/2 CUP GOJI BERRIES

1/3 CUP TURKISH APRICOTS, DICED

1 1/2 TSP VANILLA EXTRACT

METHOD

• PROCESS COCONUT UNTIL A BUTTER FORMS

• ADD COCONUT BUTTER INTO A BOWL WITH ALL OTHER INGREDIENTS AND MIX THOROUGHLY

• POUR INTO A LINED LOAF TIN (I USED A SILICONE PAN, MAKES IT EASY TO GET OUT) & SPREAD OUT EVENLY, PRESS DOWN TO COMPACT, POP INTO THE FREEZER AND SLICE ONCE SET

NOTES

– COCONUT BUTTER SETS QUITE HARD, AFTER MAKING THESE I REALISED MAKING THEM IN PATTY CASES WOULD HAVE BEEN BETTER AS THIS COULD NOT BE CUT NEATLY!

– IF YOU WOULD LIKE THIS SWEETER, YOU COULD ADD IN A SWEETENER OF CHOICE (PURE MAPLE SYRUP/HONEY/RICE MALT SYRUP/AGAVE/COCONUT SUGAR ETC)

– YOU COULD USE PUFFED QUINOA/PUFFED BROWN RICE ETC INSTEAD OF BUCKWHEAT

– YOU COULD ADD IN CACAO NIBS/CHIA SEEDS/OTHER NUTS AND SEEDS ETC FOR ADDED NUTRIENTS

– IF YOU DO NOT HAVE A PROCESSOR, YOU CAN BUY COCONUT BUTTER FROM HEALTH FOOD STORES AND SOME SUPERMARKETS
