Apple Crumble

INGREDIENTS 

APPLES     

8 MEDIUM GRANNY SMITH APPLES

1 TBS CINNAMON

1/2 TBS NUTMEG

1/2 TSP CARDAMON

1 TSP VANILLA BEAN EXTRACT

2 TBS LEMON JUICE

1 TBS TAPIOCA

CRUMBLE INGREDIENTS 

1 CUP ROLLED OATS

1 CUP WHOLEMEAL SPELT FLOUR

3/4 CUP DESICCATED COCONUT

1/4 CUP COCONUT SUGAR

1/4 CUP + 2 TBS COCONUT OIL (NOT MELTED)

PINCH OF SEA SALT

METHOD

• ADD ALL DRY CRUMBLE INGREDIENTS TO YOUR FOOD PROCESSOR AND BLITZ TO BREAK DOWN OATS SLIGHTLY, PULSE IN OIL UNTIL MIXTURE IS CRUMBLY, POP INTO THE FRIDGE

• PREHEAT THE OVEN TO 180°C

• PEEL, CORE AND DICE APPLES, AND TOSS THEM WITH OTHER INGREDIENTS IN A LARGE BOWL

• POUR INTO ONE OR TWO CASSEROLE DISHES (DEPENDING ON WHAT YOU HAVE, I USED TWO), SPRINKLE CRUMBLE OVER APPLES AND BAKE UNCOVERED FOR 20 MINUTES ON THE MIDDLE SHELF, OR UNTIL GOLDEN, THEN COVER AND BAKE FOR A FURTHER 20 MINUTES OR UNTIL APPLES ARE SOFT

* YOU COULD ADD IN CHOPPED NUTS TO THE CRUMBLE OR DRIED FRUIT TO THE APPLES

* YOU COULD USE ANOTHER FLOUR OR NUT MEAL INSTEAD OF SPELT FLOUR
