Banana and Date Loaf

INGREDIENTS

2 LARGE BANANAS, MASHED

2 TBS COCONUT OIL, MELTED

2 TBS MAPLE SYRUP

2 EGGS

1 CUP PITTED DATES, CHOPPED

1 SMALL BANANA, SLICED

2 CUPS ALMOND MEAL

1/2 CUP SHREDDED COCONUT

3/4 TSP BAKING POWDER

1/2 TSP BAKING SODA

1 TSP CINNAMON

1/4 TSP SEA SALT

METHOD

• PREHEAT OVEN TO 180 DEGREES.  LINE A LOAF PAN WITH BAKING PAPER

• COMBINE MASHED BANANA WITH WET INGREDIENTS IN A SMALL BOWL AND SET ASIDE

• COMBINE DRY INGREDIENTS IN A LARGE BOWL

• POUR WET INGREDIENTS INTO DRY AND MIX THOROUGHLY

• STIR THROUGH CHOPPED DATES, POUR MIXTURE INTO LOAF PAN AND TOP WITH SLICED BANANA.

• BAKE FOR 40 MINS ON THE MIDDLE SHELF, THEN COVER WITH FOIL IF BANANA IS LOOKING LIKE IT MIGHT START TO BURN, AND COOK FOR A FURTHER 10MINS OR UNTIL A WOODEN SKEWER COMES OUT CLEAN

• COOL COMPLETELY IN PAN BEFORE SLICING

• STORE IN AN AIRTIGHT CONTAINER IN THE FRIDGE, (MAYBE 4 DAYS?)  I WRAP INDIVIDUALLY AND STORE IN THE FREEZER
