1 CUP ALMOND MILK

BLUEBERRY COMPOTE

300G FROZEN BLUEBERRIES

METHOD

• FOR THE CHIA PUDDING, MIX TOGETHER CHIA SEEDS AND MILK IN A CONTAINER AND POP INTO THE FRIDGE OVERNIGHT (OR MINIMUM OF 2 HOURS). YOU CAN ADD IN PURE MAPLE SYRUP, OR SWEETENER OF CHOICE, VANILLA BEAN PASTE/EXTRACT, OTHER FLAVOURS IF YOU LIKE

• FOR THE BLUEBERRY COMPOTE, SIMPLY HEAT BERRIES IN A MEDIUM SAUCEPAN OVER MEDIUM HEAT UNTIL SOFTENED, MASH WITH A POTATO MASHER/FORK, BRING TO A BOIL FOR A MINUTE, THEN REDUCE TO MEDIUM AND SIMMER FOR 10 MINUTES UNTIL THICKENED. ALLOW TO COOL BEFORE SERVING WITH CHIA PUDDING
