50G DARK CHOCOLATE (I USED 90% LINDT)
2 TBS COCONUT OIL
METHOD
• PROCESS BASE INGREDIENTS UNTIL COMBINED AND PRESS INTO A LINED LOAF TIN
• MELT COCONUT OIL AND CHOCOLATE UNTIL SMOOTH, POUR OVER SLICE AND SPREAD EVENLY. POP IN THE FREEZER AND SLICE ONCE SET. STORE IN FREEZER OR FRIDGE.
NOTES
– IF YOU DON’T HAVE A FOOD PROCESSOR, SOAK THE APRICOTS IN HOT WATER FOR 15-30MINS TO SOFTEN AND THEN DRAIN AND CHOP INTO SMALL CHUNKS, USE ALMOND MEAL INSTEAD OF THE NUT AND MIX IN A BOWL
– YOU COULD SUB ALMONDS WITH OATS/SPELT FLAKES/ PEPITAS/SUNFLOWER SEEDS ETC, JUST PROCESS UNTIL A CHUNKY MEAL IS FORMED
– YOU COULD ADD IN CHIA SEEDS/GOJI BERRIES/MACA POWDER ETC FOR ADDED NUTRIENTS
-YOU COULD USE DATES OR ANOTHER DRIED FRUIT, I THINK FIGS MAY BE NICE
