INGREDIENTS – MAKES 12

1/4 CUP COCONUT CREAM

JUICE OF ONE LIME

1/4 CUP COCONUT OIL, MELTED & COOLED

1/4 CUP COCONUT FLOUR

1/4 CUP VANILLA PROTEIN POWDER

COCONUT, TO COAT

 

METHOD

• WHISK CREAM AND LIME IN A MEDIUM BOWL, ADD FLOUR THEN PROTEIN, MIXTURE WILL BE QUITE POWDERY

• ADD OIL AND MIX UNTIL COMBINED

• POP MIXTURE INTO THE FRIDGE FOR 30MINS

• ROLL SPOONFULS OF MIX INTO BALLS, TOSS IN DESSICATED COCONUT AND PLACE BALLS INTO AN AIRTIGHT CONTAINER, STORE IN THE FRIDGE, CAN ALSO BE FROZEN

– I USED RAW VANILLA PEA PROTEIN POWDER, IF USING UNFLAVOURED PROTEIN POWDER, YOU MIGHT NEED TO ADD A LITTLE SWEETENER

– YOU COULD USE LEMON INSTEAD OF LIME

– YOU COULD ADD IN/ROLL IN CHOPPED NUTS /SUPERFOOD POWDERS ETC FOR ADDED NUTRITION
