Peanut Butter Cookie Dough Bars

INGREDIENTS

3/4 CUP PEANUT BUTTER    

1/4 CUP RICE MALT SYRUP   

3 TBS COCONUT OIL                  

3/4 CUP ALMOND MEAL     

8 PIECES OF DARK CHOCOLATE, FINELY CHOPPED      

SOME ALMONDS (ABOUT 8), FINELY CHOPPED    

METHOD

• MELT COCONUT OIL, STIR IN SYRUP AND PEANUT BUTTER AND WHISK UNTIL COMBINED, STIR IN ALMOND MEAL
• PRESS MIXTURE INTO A LINED LOAF PAN/TRAY OF CHOICE (I USED A SILICONE LOAF PAN), SPRINKLE OVER THE CHOCOLATE AND ALMONDS AND PRESS THEM INTO THE DOUGH SO THAT IT DOESN’T ALL FALL OFF

• POP INTO THE FRIDGE TO SET FOR ABOUT AN HOUR, REMOVE FROM THE PAN AND SLICE (STORE IN THE FRIDGE OR FREEZER)

* YOU COULD ALSO MAKE INDIVIDUAL SERVES BY POURING MIX INTO CHOCOLATE MOULDS/PATTY CASES

* YOU COULD MAKE THESE NUT-FREE BY USING SUNFLOWER SEED BUTTER OR TAHINI, USING OATMEAL OR GROUND SUNFLOWER SEEDS/PEPITAS ETC, AND SPRINKLING CHOPPED PEPITAS ON TOP

* YOU COULD ADD IN SOME CACAO POWDER TO THE DOUGH, OR STIR THE CHOCOLATE THROUGH INSTEAD OF POPPING IT ON TOP
