1 CUP ALMONDS

1/2 C DATES

2 TBS GROUND FLAX SEEDS

1 TBS WATER

PINCH OF SALT

FILLING

5 TBS TAHINI

3 TBS PURE MAPLE SYRUP

2 TBS COCONUT OIL

CHOCOLATE

4 TBS COCONUT OIL

1 TBS PURE MAPLE SYRUP

3 TBS RAW CACAO POWDER

METHOD

• PROCESS BASE INGREDIENTS UNTIL COMBINED AND PRESS INTO A LINED LOAF TIN

• COMBINE FILLING INGREDIENTS IN A SMALL BOWL UNTIL SMOOTH, POUR OVER BASE INGREDIENTS

• MELT COCONUT OIL AND WHISK WITH CACAO AND SYRUP, UNTIL MIX IS SMOOTH, POUR OVER SLICE AND SPREAD EVENLY. POP IN THE FREEZER AND SLICE ONCE SET. STORE IN FREEZER OR FRIDGE.

* BEST EATEN WHEN STILL CHILLED, GOES MUSHY AT ROOM TEMP!

NOTES

– YOU COULD USE HONEY/RICE MALT SYRUP OR ANOTHER SWEETENER INSTEAD OF MAPLE SYRUP

– FOR A NUT FREE VERSION, YOU COULD SUBSTITUTE ALMONDS WITH OATS/SPELT FLAKES/ PEPITAS/SUNFLOWER SEEDS ETC, JUST PROCESS UNTIL A CHUNKY MEAL IS FORMED

– I USED FRESH MEDJOOL DATES, AVAILABLE IN THE FRUIT SECTION OF SUPERMARKETS OR IN FRUIT SHOPS.  I USED UNHULLED TAHINI, AVAILABLE IN SUPERMARKETS IN THE HEALTH SECTION OR HEALTH FOOD STORES, YOU COULD MAKE YOUR OWN, LIKE YOU MAKE NUT OR SEED BUTTERS
