Minty Matcha Balls

INGREDIENTS

1 CUP DRIED DATES

1 TSP PEPPERMINT EXTRACT

1/2 CUP SUNFLOWER SEEDS

1/2 CUP HEMP SEEDS

1/2 CUP PEPITAS

1 TBS MATCHA GREEN TEA POWDER

 

METHOD

• POP DATES INTO A BOWL AND COVER THEM WITH BOILING WATER AND LET SIT FOR 15-30 MINUTES TO SOFTEN

• PROCESS SEEDS UNTIL A CHUNKY MEAL FORMS, PULSE IN REMAINING DRY INGREDIENTS AND THEN SET ASIDE

• DRAIN DATES, THEN PULSE DATES WITH EXTRACT UNTIL A CHUNKY PASTE FORMS

• PULSE IN DRY INGREDIENTS UNTIL MIX FORMS A DOUGH

• ROLL TABLESPOONS OF MIXTURE INTO BALLS AND STORE IN THE FRIDGE OR FREEZER

* SUB SEEDS WITH OTHER SEEDS OR NUTS OF CHOICE (OR OATS/BUCKWHEAT GROATS ETC)

* IF YOU PREFER THEM MORE FIRM, ADD ANOTHER 1/2 CUP OF SEEDS OR DESICCATED COCONUT

* YOU COULD PRESS INTO A LINED PAN AND SLICE INSTEAD OF MAKING BALLS, AND DRIZZLE WITH SOME MELTED CHOCOLATE
