Vanilla Coconut Bars

INGREDIENTS

1/2 CUPS DESICCATED COCONUT

1/2 CUP GOJI BERRIES

1/4 CUP BOILING WATER

1/2 CUP ALMOND MILK

1 TBS ACAI POWDER

60G VANILLA PROTEIN POWDER

1 SACHET VEGGIE POWER RAAW JUICE (BIOGLAN)

METHOD

• COVER GOJI’S WITH THE BOILING WATER AND SOAK FOR 15 MINS

• DRAIN GOJI’S AND PLACE INTO YOUR PROCESSOR BOWL, ALONG WITH ALL OTHER INGREDIENTS EXCEPT COCONUT, AND PROCESS UNTIL SMOOTH

• GRADUALLY ADD COCONUT UNTIL MIXED THROUGH

• LINE A SQUARE CAKE TIN WITH CLING WRAP, POUR MIXTURE IN AND SPREAD OUT EVENLY.  COVER WITH CLING WRAP AND REFRIGERATE AT LEAST 2 HOURS. REMOVE AND SLICE

• BEST STORED IN AN AIRTIGHT CONTAINER IN THE FREEZER

* I USED AMAZONIA RAW PROTEIN POWDER, NO FAKE/HORRIBLE INGREDIENTS

* ACAI POWDER AND VEGGIE SACHET WERE ADDED JUST TO BOOST NUTRIENTS; YOU COULD LEAVE THEM OUT, SUB WITH CACAO POWDER, OR INCREASE PROTEIN

* YOU COULD ROLL INTO BALLS INSTEAD OF MAKING A SLICE

* COULD ALSO STIR IN NUTS/SEEDS/CACAO NIBS AFTER MIXING IN COCONUT, FOR A CRUNCHY TEXTURE
